Corn is a cereal crop that is part of the grass family. Indigenous to Southern Mexico, corn grows in what is known as ears, on thick, fibrous stalks that can reach up to 15 feet in height. Each stalk will produce two ears of corn, which are made up of approximately 800 corn kernels.

What is corn protein?

Corn protein, or zein, is the main storage protein found in the seeds of maize. It is usually a byproduct of corn oil production, where corn kernels are pressed and refined to make an oil. It then undergoes a centrifugal process to separate the oil from the corn meal, leaving corn protein.
